雞蛋控必學:太陽蛋、溏心蛋、水波蛋…英文怎麼說?

有營養又便宜的雞蛋,是大眾日常喜歡的食物。有時到快餐店,店員或會問大家要太陽蛋還是熟蛋,這些在英文應該怎樣表達呢?


1. 煎蛋 (fried eggs)

煎蛋有幾種不同的做法:

1(a). 太陽蛋 (sunny-side up):只煎一面,蛋黃保持液態。



  • She always orders her eggs sunny-side up. (adverb)
    她總是點太陽蛋。

  • The breakfast was served with eggs cooked sunny-side up. (adverb)
    早餐搭配了太陽蛋。

  • He carefully slid a sunny-side up egg onto his rice, letting the yolk soak into every grain. (adjective)
    他小心地將一顆太陽蛋放到米飯上,讓蛋黃滲透到每一粒米飯中。

1(b). 半熟翻面蛋/溏心煎蛋 (over easy):兩面都煎,但蛋黃仍稍微呈液態



  • She asked for her eggs fried over easy. (adverb)
    她要求溏心煎蛋。
  • I love how over easy eggs ooze yolk onto my toast. (adjective)
    我喜歡溏心煎蛋讓蛋黃流到吐司上。

1(c). 全熟翻面蛋 (over hard):兩面都煎至蛋黃完全凝固。

  • He prefers his eggs fried over hard, so there’s no runny yolk at all. (adverb)
    他喜歡蛋煎得全熟,蛋黃完全不會流動。

  • The chef carefully cooked the eggs over hard, ensuring a fully set yolk. (adverb)
    廚師小心地將雞蛋煎成全熟,確保蛋黃完全凝固。

  • The burger was topped with an over hard egg, giving it an extra layer of hearty flavor. (adjective)
    漢堡上鋪了一顆全熟煎蛋,增添了一層濃郁的風味。
對於講究飲食的人來說,介乎over easy與over hard之間還有over medium。


2. 炒蛋 (scrambled eggs)

炒蛋是將蛋打散後在平底鍋中炒至柔軟凝固,根據熟的程度還可以分soft scrambled與hard scrambled



  • She whipped up a quick breakfast of scrambled eggs and toast before heading to work. 
    她在出門上班前快速做了一份炒蛋和多士的早餐。

  • He prefers his scrambled eggs soft and fluffy rather than dry and overcooked. 
    他比較喜歡炒蛋柔軟蓬鬆,而不是乾硬或過度烹煮的口感。


3. 奄列/歐姆蛋 (omelette/omelet)

奄列是將蛋打散後在平底鍋中煎熟,然後對折包入芝士、蔬菜或肉類等餡料。



  • He ordered a ham and cheese omelette at the café, served with a side of toast. 
    他在咖啡廳點了一份火腿芝士奄列配多士。

4. 水波蛋 (poached eggs)

把蛋去殼後,在微沸的水中煮熟,就成為水波蛋,這時蛋白會凝固而蛋黃則保持流心狀態。



  • She gently placed two poached eggs on top of her avocado toast, letting the yolk run into the bread.
    她輕輕地把兩顆水波蛋放在牛油果多士上,讓蛋黃滲入麵包中。


5. 水煮蛋 (hard-boiled eggs)

水煮蛋是將蛋連殼放入沸水中煮熟,直到蛋黃和蛋白都變硬。



  • He mashed the hard-boiled eggs with mayonnaise and spices to make a delicious egg salad.
    他把水煮蛋和蛋黃醬及香料混合搗碎,做成美味的蛋沙律。

*mayonnaise (UK /ˌmeɪəˈneɪz/ US /ˈmeɪəneɪz/) 在非正式場合也可簡稱為mayo (UK /ˈmeɪəʊ/ US /ˈmeɪəʊ/)

6. 半熟蛋/溏心蛋  (soft-boiled eggs)

半熟蛋煮的時間較短,所以蛋黃仍然是流動的。



  • He enjoys eating soft-boiled eggs with a sprinkle of salt and a side of buttered toast. 
    他喜歡吃溏心蛋,撒上一點鹽,再搭配牛油多士。

再講究的話,介乎hard-boiled和soft-boiled之間還有jammy,字面上意思是口感類似jam(果醬)。
